This sophisticated looking dessert is not only appealing to the eye, but to the taste-buds as well. Serve this on a Sunday afternoon and enjoy with family conversation.
Start to finish: 70 minutes Servings: 6
1/2 cup seeded raisins 1 cup fresh soft bread crumbs 2-1/2 cups thick sweetened applesauce 1/2 cup chopped blanched almonds 2 egg yolks For the Meringue: 1/4 cup superfine sugar 1/4 cup blanched almonds 2 egg whites
Preheat Oven to 325 degrees
- In a saucepan, cover raisins with cold water, and bring to boil. Let stand for 5 minutes then drain well.
- Mix breadcrumbs, applesauce, almonds and raisins together.
- Whisk the egg yolks and stir into breadcrumb mixture.
- Pour the breadcrumb mixture into a large buttered ovenproof dish..
- Bake on center oven rack 35 minutes.
Meanwhile.
- Whisk egg whites until stiff enough to form peaks.
- Fold sugar into egg white.
- Spoon or pipe this on top of the breadcrumb mixture.
- Spike the meringue with flaked whole or halved almonds.
- Return to oven and bake on center rack for 20 minutes.
Allow to cool and serve.
